Chocolate Dip Shortbread Squares

Around this time of year, cookies are a prevalent part of merrymaking. Here’s a rich variation on the classic chocolate chip cookie: Chocolate Dip Shortbread Squares!

Chocolate Dip Shortbread Squares
Makes about 60 bars

WET INGREDIENTS
4 sticks butter, softened
1 cup sugar
1/3 cup maple syrup
1 teaspoon vanilla extract
12 ounce bag of chocolate chips, divided in half

DRY INGREDIENTS
3 2/3 cups all-purpose flour
1/2 cup cornstarch

EQUIPMENT
2 mixing bowls
Electric mixer
15″ x 11″ jelly roll pan
Double boiler

  1. Preheat your oven at 325°F.
  2. Beat together the WET INGREDIENTS with an electric mixer for a good 4 minutes.
  3. In another bowl, combine the DRY INGREDIENTS with a whisk. (Gently stirring with a whisk invites air into the mix, making a flakier cookie!)
  4. After using a spatula to form a well in the WET INGREDIENTS mixture, transfer the DRY INGREDIENTS into the well and gently fold everything together. When most of the flour is incorporated, add in only half the bag of chocolate chips and fold these in as well. Don’t work the dough too much, or it will become tough.
  5. In the greased pan, spread the dough evenly with your spatula.
  6. Place it in the oven and bake for 30 – 40 minutes and chill while the magic happens.
  7. Once the dough looks slightly brown and feels slightly firm, remove the pan from the oven. Allow to cool completely on a wire rack.
  8. Once the shortbread has cooled, cut it into 2 to 3-inch squares.
  9. Begin melting the remaining chocolate chips in a double boiler. Continually stir the chips with a spatula and keep tabs on the water by making sure it doesn’t boil out of the pan or else your chocolate may burn.
  10. Now comes the best part! While keeping the double boiler on a low simmer, dip each square in the melted chocolate. Place the dipped cookie on a cooling rack to harden. You can speed up the hardening process by placing the rack of cookies in the refrigerator, but these taste best at room temperature or a little warm.

With a few basic ingredients, including the ever popular chocolate, and a good friend, you can bake these super delicious cookies! What are some of your favorite holiday baking traditions?

    you should use italian nutella instead of chocolate…I think nutella will double the good taste

    One of the holiday traditions in my family is on Christmas morning we always have sausage balls and pigs in a blanket with coffee or hot chocolate…so whenever I have these foods it makes me feel all Christmas-y inside!

    Made these in a large tart pan instead of a jelly roll pan since i didnt want to buy anything new ;) so i ended up with 2 giant cookie shortbreads! i cut them in wedges and dusted with powdered sugar and fanned them out to serve at a family party over the weekend…i didnt have any left over! they were sooooo yummy

    Anyone has a suggestion about what to use instead of maple syrup? (W-a-a-y too expensive in my country)
