Fresh Corn and Avocado Salad

Fresh Corn and Avocado Salad

  • 3 ears of fresh sweet corn, husked and cut from the cob
  • 1/2 cup red onion, diced
  • 1 avocado, diced
  • 1 Tbsp olive oil
  • Juice of 1/2 lime
  • 1 tablespoon fresh cilantro, or basil, chopped
  • 1/2 teaspoon sea salt
  • Freshly ground pepper to taste
  1. Husk, and cut corn from the cob, removing as many silks as possible
  2. Combine all ingredients in a large bowl
  3. Serve immediately or allow to marinate (Salad is even better the next day!)
