
Spice things up in the kitchen this Valentine’s Day with February’s featured muffin. Inspired by a suggestion from Lauren Helen in last month’s post, I put together this savory, spicy cheddar muffin. If you (or someone you have the hots for) aren’t keen on sweets, these would be a great treat!
Try these spicy, cheesy thangs as a side to homemade chili and a refreshing salad!
Warm Your Heart Muffins
Makes about a half a dozen regular sized muffins.
1 cup of flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon cayenne pepper
1 cup milk
1 egg
¼ cup vegetable oil
1 cup sharp cheddar, shredded
1 teaspoon of red pepper flakes
A few drops of Frank’s RedHot per muffin
1. Preheat oven at 400°F.
2.Sift together flour, baking powder, salt, and cayenne into a mixing bowl.
3.Combine milk, egg, and oil in a separate bowl.
4.Slowing add wet mixture to dry mixture, stir slightly.
5.Gently add in cheese and pepper flakes. Do not over mix. Batter should be slightly lumpy.
6.Put about ¼ cup dollop in greased muffin tin cups.
7.Bake for 15-20 minutes.
8.Remove from oven once muffins pass a “toothpick test.” Add a few drops of Frank’s to each muffin for that special touch!
