After fashion, pugs, and Twin Peaks, our greatest love is the cupcake. Yes, cupcakes. Thanks to our proximity to Pittsburgh’s famous Dozen Bake Shop, these oh-so-sweet treats make frequent appearances in our office – and even some of our photoshoots! So what better way to celebrate a Friday than with a salute to our favorite snack?

My grandmother makes us these incredible cupcakes as a special treat, and we are always so excited when we get them! They sound a little complicated, but don’t be afraid. They are surprisingly simple once you get the rhythm of it. Starbucks likes to think they carry a comparable version of these, but trust me…these are worth the effort (and don’t cost nearly as much!). I have never met a soul who did not absolutely love these luscious cupcakes!
3 cups all-purpose flour
2 cups sugar
2/3 cup Hershey’s Cocoa
2 tsp. baking soda
1 tsp. salt
2 cups water
2/3 cup vegetable oil
2 tbls. white vinegar
2 tsp. vanilla
1 package (8 oz) cream cheese, softened
1/3 cup sugar
1/8 tsp. salt
1 cup semi-sweet chocolate chips (or milk chocolate if you prefer)
1. Prepare filling first: in small bowl, combine cream cheese, sugar, egg, and salt. Beat until smooth and creamy. Stir in chips. Set filling aside.
2. Preheat oven to 350.
3. In a large bowl combine flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Beat at medium speed for 2 minutes until well combined.
4. Fill paper lined muffin cups 2/3 full with batter. Spoon 1 level tablespoon filling into center of each cupcake. This just goes on top of the batter, but if you are concerned that it may spill over while baking, give it a little push so that it is more in the middle of the cupcake.
5. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool completely.
These make a great gift, as well as being fantastic for a special occasion…or for whenever! I love treating myself to one of these after a long day or splitting one with my mom while we have some girl time. They are a family tradition that I am happy to share with all of you…make it a tradition for your family, too!
