This holiday season, we thought we’d have some fun whipping up our own version of a childhood favorite– Snow Balls! These delectable little cakes are a fun seasonal treat made of chocolate cake and cream filling topped with fluffy coconut. While this version is our favorite, the variations on this classic cake are endless!
Homemade Snow Balls
Cake (for this recipe, I used a boxed Devil’s Food Cake mix)
Frosting (I chose a classic pre-made white frosting from the grocery store)
Mini Bundt Pan
Piping bag and tip (optional)
Butter knife or small cake spatula
1. Mix your cake, pour into the mini bundt pan and bake on appropriate settings. Allow the cake to thoroughly cool (overnight if you have the time). The longer you let it set, the easier it will be to spread the frosting over the cake.
2. Scoop some of the frosting into a piping bag and simply insert the cream into the hollow tops of the bundt cakes. If you don’t have a piping bag, you can do the same with a spoon.
3. Coat each cake with a thin layer of frosting. You can use a mini cake spatula if you have one, but a simple butter knife will also do the trick. This does not have to be perfect. The frosting is simply the glue for the next ingredient!
4. Pour your coconut into a bowl, then dip the frosted side of the cake into the coconut until the cake is fully coated. We left our coconut white, but if you’d like to go for the classic pale pink color, simple add a tiny drop of red food dye to the coconut flakes.
