Second Helpings: Recipes You Requested!

In response to the cute comments left on our post covering the recent ModCloth cupcake contest, we present two of the recipes you were dying to know the recipes for! Take a baking tip or two from these super creative ModEmployees, and try out Jen Y.’s Li’l Macs Cupcakes and Paige’s Sweet Spectrum Cupcakes.

Li’l Macs Cupcakes

“My daughters and I had a blast making these. It took us quite a bit of time to assemble them, but that’s because my helpers were having fun being messy!”

1 box chocolate cupcake mix
1 box vanilla cupcake mix
2 containers vanilla icing
Red and green food coloring
Sesame seeds, several pinches

1. Preheat oven to temperate recommended on your cupcake mix box.
2. Prepare vanilla cupcake mix, and then distribute into cupcake pan holes (no cupcake paper liners needed!) and sprinkle with sesame seeds before baking.
3. After cupcakes have cooled, cut them in half and set aside.
4. Prepare chocolate cupcake mix, but only fill cupcake pan holes one-quarter of the way full. Bake for about half the time and watch them closely. Allow to cool.
5. Mix 1 container of icing with red food coloring and the other with green for tomato and lettuce layers.
6. Assemble chocolate cupcake atop vanilla cupcake bun, decorate with icing toppings, and place sesame-sprinkled cupcake half on top.

Sweet Spectrum Cupcakes
Recipe by Paige, Quality Control.

“Don’t be discouraged if the first cupcake comes out mostly red or orange. After that, all six colors should blend together nicely โ€“ nothing too difficult at all!”

1 box vanilla cupcake mix
2 containers vanilla icing
6 separate bowls
A rainbow assortment of food coloring
Rainbow sprinkles
Cupcake papers
Large plastic bag to use as piping bag
Piping tip (optional)

1. Preheat oven to temperature recommended on your cupcake mix box.
2. Prepare cupcake mix and distribute into 6 small bowls.
3. Use food coloring to dye each part a different color.
4. Fill cupcake foils with batter in reverse rainbow order (ROYGBIV) beginning with purple, so that red is at the top.
5. Clean bowls. Use same technique to dye icing.
6. Spoon a dollop of each color into bag in rainbow order ending with purple.
7. Cut corner of bag (attaching piping tip optional). Swirl icing atop cupcakes. Top with sprinkles.
