Looking for a sweet, easy treat that shows off your patriotic side this Fourth of July? Then this is the red, white, and blue dessert is right up your alley. These bite-sized strawberry shortcakes are a breeze to assemble, taste incredible, and are perfect for parties since they don’t require silverware.
What You Need:
- 1 lb fresh strawberries
- 1 pint fresh blueberries
- 8 ounces of prepared angel food cake (these are usually about 16 ounces, so you can save the rest for later)
- 1.5 tablespoons vanilla-flavored olive oil (or olive oil with a little vanilla extract)
- 2 tablespoons powdered sugar
- whipped cream
- plastic mini-skewers
- plastic shot glasses
Wash your strawberries, remove the green tops, then chop them into small, bite-sized pieces.
Drizzle your vanilla-flavored olive oil and powdered sugar on top of your strawberries and mix well. You can add more or less of both to taste. If you don’t have vanilla-flavored olive oil, add a drop or two of vanilla extract and regular olive oil. Set aside.
Chop your angel food cake into tiny, bite-sized pieces. You don’t want them to be too big or else they’ll get stuck in the shot glasses.
Begin assembling your strawberry shortcake minis. First place a small layer of the strawberries at the bottom, then add two to four pieces of cake, then add more strawberries on top.
Add three blueberries to each skewer.
Finally, top each shot glass with a dollop of whipped cream and then add your blueberry skewers. Wait until the very last minute to add the whipped cream, though, because it’ll get melty. You can even let people add the whipped cream themselves!
+And while you’re celebrating this Fourth of July, why not sport some stylish flag swag, like these?
