Your Halloween Cocktail Is Here: The Belle of the Eyeball

Hosting an intimate gathering or full-on bash this Halloween? You could fill your fridge with beer or sip on fancy Bordeaux wine—and there’s nothing wrong with either, darling!—but if you’re feeling creative, then consider a signature Halloween cocktail for the evening. And if you really want to impress and perhaps elicit a few “Eww…that’s so cool!” comments, consider whipping together The Belle of the Eyeball!

What You Need

  • 2 oz. white/silver tequila
  • 1 oz. triple sec (or your choice fruit liqueur)
  • 1 oz. lychee juice (or your choice fruit juice)
  • .25 oz freshly squeezed lemon juice
  • Peeled and pitted lychee berries (canned)
  • Cherries
  • Vanilla wafers

Step One: Mix

Combine all your ingredients in a shaker filled with ice.

Step Two: Shake & Pour

Give your mixer a good shake so that the ingredients get nice and cold, then pour directly into a martini glass.

Step Three: Rim

Smash a handful of vanilla wafers until they’ve turned to dust! Place them on a plate, then dip a martini glass (or your preferred vessel) in a bit of fruit juice and then into the wafers.

Step Three: Garnish

This garnish will make everyone who sees it squirm, which is exactly the point! All you have to do is take your lychee berry, which has already been pitted, stuff it with a cherry and skewer it. Try the single eyeball skewer, or the double eye ball skewer — the choice is yours!

We experimented with both dark red sour cherries and maraschino cherries. The former create a very realistic bloody eyeball, while the latter look a bit more cutesy. You can see both versions here. Oh, and if you dare, add a couple drops of cherry juice to your drink for a bloody, layered effect.

Step Four: Enjoy

Your Halloween cocktail is ready to sip and be featured in plenty of photos…naturally!
