ModCloth Friendsgiving: Vegan Hard Cider Fudge with Kaylah of The Dainty Squid

Getting ready to gather ’round the table with your nearest and dearest for a Thanksgiving feast? If you’re in need of a recipe to round-out your holiday menu, look no further, this week we’re welcoming five guest bloggers to the Story by ModCloth Friendsgiving table. Today, we’re welcoming Kaylah of The Dainty Squid, who’s here with the final course: a Vegan Hard Apple Cider Fudge recipe that’s sure to satisfy your sweet tooth.

From Kaylah: Fudge is one of my favorite holiday treats. My grandma always used to bring homemade fudge to our holiday gatherings, she’d wrap it up like a present, and it was honestly one of my favorite parts of the holiday. I whipped up this super simple — but absolutely delicious — fudge recipe so I could enjoy it all year round, and it’s the perfect dessert to finish off your Thanksgiving feast!

Vegan Hard Apple Cider Fudge

Ingredients:
4.5 cups powdered sugar
1 8oz container Tofutti Better Than Cream Cheese
16oz chocolate chips (about 1.5 bags)
3 Tbsp hard apple cider
Double boiler
Parchment paper
Cake pan — the larger the pan, the thinner your fudge will be

1.  Line the cake pan with your parchment paper.

2. Mix together the powdered sugar and “cream cheese”. Beat until thoroughly combined.

3. Using a double boiler, melt your chocolate chips. When they are completely melted, add the chocolate to the sugar and cream cheese mixture, mixing to combine.

4. Finally, slowly add in the apple cider one tablespoon at a time, mixing thoroughly after each tablespoon. Pour the mixture into the parchment-lined cake pan. Spread the fudge evenly to your desired thickness. Let sit in the refrigerator for 3 or 4  hours before cutting into pieces. Store in an airtight container in the fridge. Enjoy!
