Fall is officially here, which means that cool mornings, changing leaves, and apple season have arrived! To celebrate, we’ve got two cider recipes for you: one hot and spicy for the chillier temps, the other, cool and simple to enjoy while basking under the autumn sun. Interested? Here are they are:

Chai Spiced Spiked Cider

Tea is normally my go-to beverage of choice, but you just can’t beat hot apple cider in the fall. I was debating between a cup of chai tea or cider, and I realized that I didn’t have to pick one or the other. This recipe blends the intense spiciness of chai with the crisp sweetness of cider. Add with a shot of your favorite liquor, it becomes the perfect bevvie to sip while curled up next to a fire.

Ingredients:
3 cups apple cider
½ cup sugar (optional)
8 whole cloves
8 crushed cardamom pods
1 3 inch cinnamon stick
¼ tsp ground ginger
Apple for garnish (optional)
Additional cinnamon sticks for garnish (optional)
Your favorite liquor (optional)

Pour your cider into the pan. Add sugar if you want a sweeter drink.

Stone Fence

If you’re not up for half an hour of simmering and prefer a cool, crisp drink, then the Stone Fence is the perfect fall choice for you. This colonial-era drink has been a part of American history since the 1700s, when Colonel Ethan Allen of Vermont and his Green Mountain Boys famously pounded them back before taking Fort Ticonderoga in the Revolutionary War. It can be made with any liquor, including rum, applejack, brandy, whisky, and even Scotch (Revolutionary War heroes weren’t picky, but you can be).

Ingredients:
Hard cider
Your favorite liquor
Apple for garnish (optional)
